Here at King’s Kitchen we’re eager to offer our friends (that’s you) more than just wickedly delicious meals.
For, though eating them can be fun, enjoying the experience of making them yourself with pals is even better.
So, we’ve decided to let you in on the action by sharing some of our favourite recipes!
In the mood for Caribbean Sweet potato & Chickpea Spinach Curry?
2 cups cooked chickpeas
2 medium sweet potatoes diced
1 finely diced small white onion
2 tbsp mild curry powder
1 tbsp turmeric powder
1tbsp ground cumin
3-4 green cardamoms
1 cinnamon stick
1 tbsp minced garlic
1/2 bunch fresh thyme
1 bay leaf
2tbsp Olive oil
Season your chickpeas & diced sweet potatoes with spices & crushed garlic. Next, leave your ingredients to marinate in seal proof bag in fridge overnight. Yes we know what your thinking….why season chickpeas, we simply state why wouldn’t you!!!
After all food always taste better after a good marination session 🙂
Heat olive oil on medium heat. Fry your diced onion with green cardamoms, cinnamon stick & thyme to release flavour for approx 2-3 mins. Now stir in you chickpeas & sweet potatoes making sure you cover everything with all that deliciousness.
After about five minutes pour water just covering your mixture and add one bay leaf. Cover your brewing meal with a lid.
Let it all simmer and shake for 35-40 mins until chickpeas are soft in texture & sweet potatoes has been dissolved.
Add more water if you feel the mixture is far too thick.
Bring down heat to low, now chuck in your washed spinach leaves. (Side note…always only use foods such as spinach & coriander at the end of cooking, this ensures freshness & fuller flavour also it keeps all that nutritional goodness too)
Now your Caribbean chickpea & spinach curry is ready. Serve with your favourite carb or protein. We love quinoa & peas….keep a watch of our blog for this alternative to traditional rice n peas…so much healthier & in my opinion tastier ?
